Musaengchae
Pickled Radish
Ingredients
- 1 Korean radish or daikon 3 1/2 (650g), peeled and cut into matchsticks 
- 1 Tbs Kosher salt 
- 1 Tbs (15ml) vinegar 
- 2 tsp (10g) red pepper powder 
- 2 tsp (10g) sugar 
- 2 cloves garlic, minced 
- 1 green onion, chopped 
- 1 tsp (5g) toasted sesame seeds. 
Serves 4-6
Step 1 - Prep and Salt the Radish
- Add radish pieces to a large bowl.
- Mix in salt and set aside for 5 minutes.
- Remove excess water with a kitchen towel.
Step 2 - Mix and Serve
- To the radish, add green onion, sugar, pepper powder, vinegar, and garlic.
- Mix together by hand or with a large spoon until well combined.
- Transfer to a serving dish and garnish with sesame seeds.
