Pickled Radish

Ingredients

  • 1 Korean radish or daikon 3 1/2 (650g), peeled and cut into matchsticks

  • 1 Tbs Kosher salt

  • 1 Tbs (15ml) vinegar

  • 2 tsp (10g) red pepper powder

  • 2 tsp (10g) sugar

  • 2 cloves garlic, minced

  • 1 green onion, chopped

  • 1 tsp (5g) toasted sesame seeds.

Serves 4-6

 

Step 1 - Prep and Salt the Radish

  • Add radish pieces to a large bowl.
  • Mix in salt and set aside for 5 minutes.
  • Remove excess water with a kitchen towel. 

Step 2 - Mix and Serve

  • To the radish, add green onion, sugar, pepper powder, vinegar, and garlic.
  • Mix together by hand or with a large spoon until well combined.
  • Transfer to a serving dish and garnish with sesame seeds.
