Garlic Spinach
Ingredients
- 12 oz (350g) spinach 
- 1 scallion, chopped 
- 2 tsp (10g) Korean red chili pepper paste 
- 2 tsp (10ml) soy sauce 
- 3 Garlic cloves, minced 
- 1/2 tsp (3g) sugar 
- 1 tsp (5ml) sesame oil 
- 1 tsp (5g) sesame seeds 
- salt and pepper to taste 
Step 1 - Prepping and Salting the Cabbage
- Blanch spinach in salted water. 
- Remove and shock in cold water. 
- Squeeze to remove water. 
- Chop into 2-3 inch (4-7cm) lengths. 
- Mix pepper paste, garlic, sugar, sesame oil, sesame seeds, salt and pepper. 
- Toss spinach with remaining ingredients. 
- Place on serving platter.
