Domi goowi

Korean Red Snapper


Ingredients

  • 1 whole red snapper (450-900g), gutted and scaled
  • 3 Tbs (45ml) Korean chili paste
  • 1 Tbs (15ml) soy sauce
  • 2 tsp (10g) sugar
  • 1 garlic clove, finely minced
  • 1/2 tsp (5g) ginger, grated
  • 1 tsp (5ml) lemon juice
  • 1 tsp (5ml) sesame oil
  • 2 tsp (10g) toasted sesame seeds
  • 1 green onion, finely chopped

Step 1 - Cooking the Fish

  • Cut 3 deep slits on each side of cleaned fish.
  • Generously spread inside and outside with sea salt, refrigerate for 30 min. 
  • Turn on oven broiler to low.
  • Put fish in foil lined pan, with 1/3 cup (80ml) water.   
  • The fish should be on top rack.
  • Broil 8-10 minutes on first side, then flip and cook 6-8 minutes.
 

Step 2 - Prepare the Sauce and Serve

  • Combine chili paste, soy sauce, sugar, garlic, ginger, lemon juice, sesame oil, sesame seeds, and green onion. 
  • Pull fish from oven, spread the sauce over both sides of fish.

Serve!
