Korean Red Snapper
Ingredients
- 1 whole red snapper (450-900g), gutted and scaled
- 3 Tbs (45ml) Korean chili paste
- 1 Tbs (15ml) soy sauce
- 2 tsp (10g) sugar
- 1 garlic clove, finely minced
- 1/2 tsp (5g) ginger, grated
- 1 tsp (5ml) lemon juice
- 1 tsp (5ml) sesame oil
- 2 tsp (10g) toasted sesame seeds
- 1 green onion, finely chopped
Step 1 - Cooking the Fish
- Cut 3 deep slits on each side of cleaned fish.
- Generously spread inside and outside with sea salt, refrigerate for 30 min.
- Turn on oven broiler to low.
- Put fish in foil lined pan, with 1/3 cup (80ml) water.
- The fish should be on top rack.
- Broil 8-10 minutes on first side, then flip and cook 6-8 minutes.
Step 2 - Prepare the Sauce and Serve
- Combine chili paste, soy sauce, sugar, garlic, ginger, lemon juice, sesame oil, sesame seeds, and green onion.
- Pull fish from oven, spread the sauce over both sides of fish.
Serve!
