Stuffed Pancakes
Ingredients
- 2 cups (250g) all purpose flour 
- 1 cup (235ml) warm water 
- 2 tsp (5.6g) active dry yeast 
- 1 tsp (2.5g) salt 
- 2 Tbs (30g) white sugar 
- 1 Tbs (15ml) vegetable oil 
- 2 Tbs (50g) sugar 
- 1/4 cup (50g) brown sugar 
- 1/4 cup (50g) walnuts, chopped 
- 1/4 sps (0.6g) cinnamon powder 
Makes 8 pancakes
Step 1 - Prepare the Hotteok dough
- Pour water into medium bowl
- Mix white sugar, yeast, salt, vegetable oil in medium bowl.
- Add flour and mix it with wooden spoon until fully combined and dough ball forms.
- Knead on counter for 3-4 minutes, roll into ball and place in lightly oiled bowl, covered.
- Let the dough rise for 1 hour or until doubled.
- Remove from bowl, knead for 1 minute, return to bowl.
- Let rise for 10-15 minutes.
Step 2 - Prepare the filling
- Mix ½ cup brown sugar, 1 ts cinnamon powder, and 2 tbs chopped walnuts in a bowl.
 *tip: you could use mozzarella cheese for stuffing. Invent your own fillings with your favorite ingredients!
Step 3 - Make the pancakes
- On a flour dusted counter, knead the dough again to remove the gas bubbles. 
- Divide into 8 equal pieces 
- One at a time, flatten the dough ball and put some filling in the center of the dough, and then seal it to make a ball. 
Step 3 - Make the pancakes
- Heat skillet with enough oil to coat the whole pan. 
- Press filled dough ball into the pan and flatten with spatula until it looks like thin pancake. 
- Cook until golden brown (about 30 seconds). 
- Turn over and press with a spatula until also golden brown. 
- Flip back over one last time then reduce the heat to low. 
- Cover with lid and cook until the sugar filing fully melts (about 1 min). 
Remove, let cool slightly, Serve!
